Lemon Blueberry Muffins

Dry Ingredients:

  • 1 and 1/4 cups all-purpose flour

  • 1 cup quick oats

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup blueberries

Wet Ingredients:

  • 2 eggs

  • 1/2 cup unsweetened applesauce

  • 1/4 cup vanilla greek yogurt

  • 1/4 cup olive oil

  • 1/2 cup honey

  • 1 tsp vanilla

  • juice of 2 lemons

  • zest of 1 lemon


The Method:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, whisk together the flour, oats, baking powder, and salt.

  3. In a separate bowl, whisk together the wet ingredients (minus the lemon zest).

  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix, as it can result in dense muffins.

  5. Gently fold in 3/4 cup of the fresh blueberries and the lemon zest, ensuring they are evenly distributed throughout the batter.

  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

  7. Top off the muffins with extra blueberries and lemon zest.

  8. Bake in the preheated oven for approximately 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  9. Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.
