Wholesome Peanut Butter & Jelly Muffins

  • 2 ripe bananas, mashed

  • 2 whole eggs

  • 1/3 cup honey or maple syrup

  • 1/3 cup creamy peanut butter + 3 tbsp melted for drizzling

  • 1 tsp vanilla

  • 1/4 cup milk

  • 1.5 cups mixed berries, diced (strawberries, raspberries, blueberries)

Dry Ingredients:

  • 1 cup all-purpose flour

  • 1 cup quick oats

  • 2 scoops protein powder - Code "JACLYN" for 10% off

  • 2 tsp baking powder

  • pinch of salt

  • dash of cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups with cooking spray.

  2. In a medium-sized mixing bowl, combine wet ingredients (minus the berries and extra pb). Mix until well combined.

  3. In a separate, large bowl whisk together the dry ingredients.

  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the muffins tender.

  5. Gently fold in the diced berries, ensuring they are evenly distributed throughout the batter.

  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full and top each muffin with additional berries.

  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  8. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

  9. Once cooled, drizzle the additional peanut butter on top and serve these protein-packed, wholesome pb&j muffins and enjoy every satisfying bite!
