Ingredients:
1/2 cup all-purpose flour (or gluten-free flour for a gluten-free version)
1 tsp baking powder
1 tsp pumpkin pie spice
1/4 cup of canned pumpkin puree
1/4 cup of Greek yogurt
1 tbsp coconut oil
1 tbsp cinnamon
2 tbsp brown sugar
optional: maple syrup for the top
The Method:
In a bowl, combine the flour, baking powder, and pumpkin pie spice. Mix well to ensure the dry ingredients are evenly incorporated.
Slowly add in the greek yogurt and pumpkin puree and mix until a dough-like texture forms.
Transfer the dough onto a floured surface and knead it gently for a few minutes until it becomes elastic and easy to work with.
Roll out the dough into a rectangular shape, about 1/4 inch thick.
Spread the oil on top of the dough and then add the cinnamon and brown sugar on top.
Cut down the center into 2 long rectangles and then roll one side tightly. Next, place the rolled piece on top of the other rectangle and continue rolling to make one, large cinnamon roll.
Place the cinnamon roll in a small ramekin or bowl and microwave for 2 minutes.
